Spinach and Cheese Tortelloni + Shrimp & Chicken

Quick Shrimp Pasta Recipe

I was trying to think of a one pot dish that would be easy to eat, full of flavor, and have limited ingredients. For me these days, it’s gotta be 5 ingredients or less (not including seasonings). The easier, the better!

I discovered a bag of Spinach and Cheese Tortelloni in the freezer and knew I could come up with a quick and simple killer meal! I basically cooked this with olive oil, butter, white wine, diced onions, fresh garlic, and – Seasoned it with Italian seasoning, basil, garlic pepper, & Lawry’s season salt – added shrimp and chunks of chicken I diced. Sprinkle with parmesan cheese & parsley and voila!

It is so delicious and warms up even better. So much so that almost every time I warm up leftovers the next day I say, “this tastes like it came from a restaurant.” Seriously! I served it with garlic-butter french bread, green salad (not pictured), and white wine.

I don’t know about you, but I always peel all of the shrimp from its shell, whether it’s just for myself, Mark and me, the family, or for guests…peeling ahead of time is just definitely easier to eat! Bon appétit!
