I’ve been on a brief hiatus, but I’m back. Today I’m sharing one of my favorite go-to recipes: a quick and easy Italian Chicken Pasta dish. Because I make this quite often, it normally takes less than 20 minutes to prepare…if you’re using store-bought rotisserie chicken or leftover chicken. And let me tell you, if it takes longer than 30 minutes, I’m just not that interested!!!
Recipe for 2
Diced chicken, amount up to you
Heavy whipping cream
Lemon juice, about 2 teaspoon from lemon
5-6 asparagus stalk, cut into pieces
Handful of sliced red bell pepper
Half handful of diced onions
Seasonings (amount your preference): Black pepper, Italian, Garlic Salt, Garlic Pepper, Basil, Lowery’s Season salt
1/2 teaspoon flour
Shredded parmesan cheese
- Boil pasta according to package and drain.
- In another pot, heat heavy whipping cream and flour, stir
- Add seasonings and lemon juice, stir
- Stir in asparagus, red bell peppers, and onions for about 5 minutes
- Add boiled mixture to pasta and stir
- Add chicken and stir
- Let sit for about 10 minutes for extra thickening
- Sprinkle parmesan cheese on top and garnish with lemon slices
Sometimes I use shrimp instead of chicken. It all depends on what you’re in the mood for!

Being quarantined and all, I know we all have gotten tired of cooking. Well, this is such a quick and easy meal to prepare, it’s almost like not cooking. And after you make this a few times, it will almost be like take-out!
