Pumpkin Bread Recipe

Yep, it’s that time of the year when EVERYTHING is pumpkin!!!! And I always get excited about it because I LOVE making pumpkin pancakes and pumpkin bread. Most of my family and friends weren’t into pumpkin ‘anything’ because we didn’t grow up eating anything pumpkin. But being the good sport as they’ve been the past few years, they’ve tasted my pumpkin recipes and liked them all. They actually look forward to them.

Today, I am sharing my favorite pumpkin bread recipe. (If you saw on my Instastories last week, I searched for a couple of weeks for a white loaf baking dish and finally found one at HomeGoods.) Anyhoo, in this recipe, I included walnuts, raisons, and dates, but it is completely optional.

Recipe

1-2/3 cups flour

1 cup sugar

1/2 cup dark brown sugar

1 teaspoon baking soda

1 teaspoon ground cinnamon

3/4 teaspoon salt

1/2 teaspoon baking powder

1/2 teaspoon ground nutmeg

1/4 teaspoon ground cloves

2 large eggs, room temperature

1 can canned pumpkin

1/2 cup canola oil

1/2 cup water

1 cup chopped walnuts

1/4 cup dates

1/4 cup raisons

1. Preheat oven to 350. Combine the first nine ingredients. Whisk together eggs, pumpkin, oil, and water. Stir into the bowl of dry ingredients. Fold in walnuts, dates, and raisins.

2. Pour into a greased 9×5-inch loaf pan. Bake until a toothpick inserted in the center comes out clean, 65 – 70 minutes. Cool in the pan before serving.

1 Slice: 221 calories, 10g fat (1g saturated fat), 23mg cholesterol, 212mg sodium, 31g carbohydrate (20g sugars, 1g fiber), 3g protein

If you’re not feeling like Maratha Stewart with making homemade pumpkin bread, you could totally make this using the Trader Joe’s Pumpkin Mix. I hear it’s just as delicious! It was actually my first choice, but they have been out in my area since mid-October…even thought it’s seasonal!!! Therefore, I was forced to go the homemade route which was plenty fine with me.

    This would be great for Xmas party dessert. I will try out before in case I fail. I like how you use dark brown sugar instead of white sugar. Briliant.

    I am a bread lover of all kinds. Zucchini is my favorite, but this pumpkin bread sounds yummy.

    Yum! I always order the pumpkin loaf from Starbucks, but this sounds way tastier (and more cost effective!) Love the idea of adding in dates!

    I really enjoy breads, banana bread is my favorite. Although it is definitely pumpkin season throughout the US, pumpkin isn’t one of my favorite flavors. But like with most things, I’d at least try it to see if I’d like it.

      I grew up on banana nut bread. So I definitely get it. I remember the first time I tried pumpkin bread. Fell in love immediately! You should DEFINITELY give it a try!
