I made this salad for the first time a couple of months ago but never really got around to posting about it. I’m not a clean eater, but I know it’s something I really need to do…at least half the time I eat. This is one of those salads that is tasty as well as easy to make.
This salad can be whipped up in less than 5 minutes with minimum products.
• Lettuce (I use red leaf)
• 2 or 3 Large Brussel Sprouts
• Fresh Lemon Juice
• Olive Oil
• Balsamic Vinegar
• Grated Parmasan Cheese (Fresh)
• Salt and pepper to taste
Cut up lettuce and slice or grate brussel sprouts. Put in a bowl or plate. Squeeze lemon juice over greens. Add about 3 teaspoons of olive oil and a dash of balsamic vinegar. If you so desire, add salt and pepper for more flavoring.
And that’s it!
This is a quick, easy, healthy, light, and delicious salad that can be eaten as lunch or dinner. I definitely plan to making this a couple of days a week for my weekday lunch.
